Nothing says summer like red, white and blue fruit parfaits. I love this recipe because it is so tasty, so healthy and of course so festive. Holiday weekends can be a challenging time for your waistline…with barbecue foods, holiday treats and so many delicious meals it can be easy to get off track. Stay the course by bringing some healthy patriotic options to your barbecue or family get together. For these parfaits I love using coconut or almond yogurt because I stay away from dairy for the most part – but that being said, if you love greek yogurt it will taste delicious in these parfaits as well. The other secret to this recipe is the shredded coconut I add to give extra texture, but that is optional as well if you do not love coconut. Feel free to top the parfait with coconut or regular whipped cream and use any red and blue berries you want!
Vanilla Coconut Yogurt
Use a clear glass for these parfaits so you can see all the beautiful colors. Start with a layer of yogurt at the bottom of the glass, then sprinkle some srheeded coconut on top. Slice banana and make a layer of banana slices on the bottom. Add a second layer of coconut yogurt and shredded coconut, then add your layer of sliced strawberries or raspberries. Add another layer of coconut yogurt and shredded coconut and then a second layer of bananas. Finish you last layer of coconut yogurt and shredded coconut and then top the parfait with a heaping amount of blueberries. Sprinkle added coconut on top or top with whipped cream. These parfaits taste as good as they look, are low in calories and high in nutrients. Who said holiday weekends can’t be healthy?! : )
