1 Cup Red Quinoa
1 Cup Dried Cranberries
1/4 Cup Chopped Walnuts
1/2 Cup Red Grapes Sliced
1/2 Cup Carrots Sliced (a mix of orange, purple, yellow and white organic carrots that I get at my local farmer’s market are my favorite to use)
1 Bunch Little Green Onions Chopped
1 1/2 Tablespoon Olive Oil
1/2 Teaspoon Salt
1/4 Teaspoon Pepper
Directions:
Rinse quinoa thoroughly and place it in a pot with 2 cups of water. Bring water to a boil and then reduce heat to a simmer to cook for about 15-20 minutes. Once quinoa is cooked allow to cool. In a separate bowl combine the dried cranberries, chopped walnuts, little green onions, sliced carrots and sliced grapes. Mix the topping with the quinoa until combined. Add the olive oil, vinegar, salt and pepper and stir to combine. Chill for 30 minutes – then serve and enjoy!
