These autumn muffins are a healthy alternative to normal muffin recipes with no oil! Love the apple and allspice for delicious fall flavors.
Ingredients
1/2 Cup Almond Butter
1 Cup Almond Milk
1 Teaspoon Vanilla
2 Apples Peeled and Diced
1/2 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
2 Tablespoons White Vinegar
1/8 Teaspoon Salt
1/4 Teaspoon Allspice
1 Banana
1 Cup Flour
1/2 Cup Organic Oat Bran
2 Tablespoons Organic Brown Sugar (optional)
Directions
Preheat oven to 350 degrees. In a medium size bowl combine flour, all bran, sugar, baking powder, baking soda, salt, allspice and diced apples. In a second bowl heat up the almond butter until softened, then add the banana and mash together. Stir in the almond milk, vanilla, and vinegar. Next mix the wet and dry ingredients together gently until combined. Fill your muffin tin with liners, then fill each one with batter about 3/4 full. Bake in the oven for 10-15 minutes or until a toothpick inserted into the center comes out clean.
