I love this great alternative to a basic salad. Make and eat on its own – or throw inside a whole wheat pita for a healthy vegetarian sandwich. You can also add in chicken or shrimp if you want – lots of options with this one and tastes delicious!
Ingredients:
1 Can Black Beans
1 Cucumber
4 Vine Tomatoes
Cilantro
1 Avocado
1 Lemon
Salt
Pepper
Olive Oil
Red Wine Vinegar
Directions:
Chop the avocado, cucumber and tomatoes up coarsely and toss in a bowl. Mix in the black beans. Squeeze half of a lemon over the salad. Salt and pepper to taste. Chop up a few springs of cilantro and mix into the bowl. Toss with red wine vinegar and 2 tablespoons of olive oil to taste.
