Protein balls are one of my major tips for quick and healthy snacks! You can prep these balls on the weekend ahead of time, and store them in a tupperware to grab a few on the go for week day snacks. Protein balls make an amazing pre or post workout snack…or a sweet treat for a healthy dessert. My favorite thing is you can add almost any nuts, dried fruit, nut butters etc. that you have in your pantry and they taste amazing. Chocolate and peanut butter is a match made in heaven so I am a HUGE fan of this recipe…but feel free to adjust it however you want. The maple syrup in this recipe is optional and if you want a less sweet option feel free to leave it out!
Ingredients:
1 1/4 C Organic Oats
1/2 C Vanilla Protein Powder
1/4 C Chia Seeds
1/4 C Mini Organic Chocolate Chips
1/2 C Organic Peanut Butter
2 Tbsp Maple Syrup (optional)
1/4 C Almond Milk
Directions:
Start by mixing all the wet ingredients together until smooth. Use room temperature peanut butter so that it mixes easily with the almond milk and maple syrup. If you don’t want the protein balls to be as sweet you can leave our the maple syrup or just use 1 tablespoon. In a separate small bowl mix together all the dry ingredients. Next, slowly add the dry ingredients to the wet ingredients, mixing as you go. I find it easier sometimes to mix with my hands to make sure everything is combined well! Grab a small amount of the mixture and roll into a ball. Make balls with all of your dough and place them on a plate. Cover the plate with plastic wrap and allow the balls to set for about 20 minutes in the fridge! Enjoy for a healthy snack or treat or save for later!
