Roasted pumpkin seeds are one of my favorite healthy Halloween treats. Simple to make and so delicious and crunchy to snack on – perfect for avoiding the candy cravings!
Ingredients:
1 Pumpkin to remove seeds from
2 Tablespoons of Olive Oil
Sea Salt
Optional Seasoning: Paprika, Cinnamon, Cayenne Pepper
Directions:
Preheat oven to 300 degrees. Cut a hole in the top of your pumpkin and spoon out the insides. Separate the seeds from the flesh of the pumpkin, place the seeds in a colander and wash thoroughly with water. Dump seeds into a bowl and drizzle in the olive oil and then seasonings of your choice. For basic pumpkin seeds just sprinkle on salt – you can also add paprika, cayenne pepper or any other seasoning you like! Lay seeds out on a baking sheet in a single layer. Bake for about 45 minutes, stirring occasionally until seeds are golden brown. Enjoy!
