These rice paper rolls are SO delicious and simple to make with whatever ingredients you have in your fridge. They make an amazing appetizer and are great to bring to a party or serve at your next barbecue. The ones I made were veggie rolls, but you can add shrimp, pork or fish to make the rolls more of a meal. You can also add rice noodles in the wrap as well to make them heartier. You can find the rice paper wraps in the asian food section at your local grocery store. Feel free to make and use any dipping sauce you want!
Ingredients:
Rice paper wraps
Cucumber
Cabbage
Carrots
Avocado
Shrimp (optional)
Directions:
Start by chopping all your veggies into long thin strips that are easy to place in the wraps. Keep the vegetables thin so they are easy to wrap and you can fit a large variety in each roll. To cook the rice sheet wraps, boil water and pour boiling water in a sauté pan. Take one of the rice wrap sheets and put it in the water. Let it sit in the warm/hot water for about 30 seconds until the rice wrap sheet has softened and is flexible. Take the rice sheet out and place it on a plate. Add the vegetables and anything else you want in the rice roll wrap. Fill the wrap close to one end of the sheet with any veggies you want and add shrimp if you want more protein. Then begin to roll the rice paper gently – folding in the sides and wrapping it tightly. Once the roll is wrapped you are done! Repeat and make all your rolls. For a healthy sauce I like to use coconut aminos, but you can use a peanut sauce if you want a sweeter sauce option.
